This recipe is for pumpkin cranberry cookies, adapted by Donna Ritchie (Josiah's Mom) from a Betty Crocker cookbook. They are a delicious treat around the fall holiday season.
Heat oven to 375 degrees. Mix sugar and butter well, then add the pumpkin. In another bowl thoroughly mix the flour, baking soda, baking powder, cinnamon and salt. Stir the dry ingredients into the wet ones. Last, stir the cranberries in.
Drop by teaspoonful onto ungreased cookie sheet. Bake until light brown, 10-12 min. Immediately remove from cookie sheet; cool.
Unbleached flour can be used in place of spelt flour.
A small pumpkin can provide 3 cups of cooked & mashed pumpkin.
